Passion Tea Lemonade

Ingredients

  • 5¼ c. water, divided

  • 4 Tazo® Passion® tea bags

  • ¼ c. sugar

  • 4” piece lemongrass, finely chopped

  • 2 small cinnamon sticks

  • ½ c. fresh lemon juice

  • Ice, to serve

  • Garnish: (optional)
  • Fresh lemon slices

  • Sprigs of fresh mint

Directions

  • Bring four cups water to a rapid bowl in a teapot or saucepan. Remove from heat and add tea bags. Allow tea bags to steep for several minutes before discarding. 
  • To prepare the infused simple syrup, combine a quarter cup water, sugar, lemongrass, and cinnamon sticks in a small saucepan and place over medium heat. Simmer, stirring occasionally, until mixture is heated through and starts to thicken, approximately 4-5 minutes.
  • Remove from heat and pour through a fine mesh strainer to separate the solids from the liquid. Discard solids and set the remaining simple syrup aside to cool. 
  • Combine the brewed tea, lemon juice, and remaining cup of water in a large pitcher. Add infused simple syrup, to taste, and stir to combine. 
  • To serve, fill four chilled glasses with ice before adding the sweetened iced tea mixture. Garnish with lemon slices and sprigs of fresh mint, if using, and serve immediately. Enjoy!

Classic Moscow Mule with Fresh Ginger Simple Syrup

Although Moscow Mules are meant to be enjoyed ice cold, there is something inherently comforting about the warm, spicy notes of ginger found in this classic cocktail. 

Traditionally, Moscow Mules are served in beautiful copper mugs that are both appealing and functional. Unfortunately, this popular metal may be unhealthy if ingested in significant amounts. As a result, most copper mugs sold today are lined with a non-reactive metal. However, if you have the more traditional, unlined versions, avoid serving hot or acidic liquids in them to avoid any issues.

Classic Moscow Mule with Fresh Ginger Simple Syrup

Ingredients

  • 2 oz. premium vodka

  • 2 T. fresh lime juice

  • Ginger beer (enough to top off mug)

  • 2 t. ginger simple syrup*, or to taste

  • Fresh mint sprigs, to garnish

  • Lime wedges, to garnish

  • Ginger Simple Syrup
  • ½ c. water

  • ½ c. white sugar

  • 3” fresh ginger, peeled and cut into small pieces

Directions

  • To make the ginger simple syrup, add water and sugar to a medium saucepan. Peel a 3” piece of fresh ginger and chop into small pieces and add to the pan.
  • Bring mixture to a boil, then reduce heat to low and simmer for 20 minutes. Remove from heat and let cool. 
  • Fill copper mugs with ice cubes and add vodka and lime juice. Top with ginger beer and a drizzle of simple syrup. Stir to combine. Garnish with a sprig of fresh mint and a wedge of lime and serve immediately. Enjoy!

Notes

  • Note: The smaller you cut each piece of ginger, the more surface area you will expose to the boiling sugar mixture. This will give your simple syrup a stronger ginger flavor.

I am a fan of grapefruit and my favorite alcohol is vodka so this pink grapefruit martini makes sense to me. It’s a light and refreshing cocktail and the perfect refreshing drink on a warm day or any other time really.

For an equally delicious alcohol-free version, replace the vodka and orange liquor with 1 cup sparkling water and ¼ cup fresh orange juice. Then, pour all ingredients into a pitcher filled with ice, rather than a cocktail shaker, to combine before serving.  

Ingredients

  • Ice, to fill shaker

  • ¾ c. fresh pink grapefruit juice

  • 2 T. fresh lime juice 

  • 3 oz. vodka 

  • 1 oz. orange liquor, such as Cointreau or triple sec 

  • 1 large lime, cut into slices

Directions

  • Fill cocktail shaker with ice and add all other ingredients. Cover and shake vigorously to blend. 
  • Remove lid and strain into martini glasses. Garnish with slices of lime and serve immediately. Enjoy!

Pumpkin Pie Spice Irish Coffee

Pumpkin pie spice is one of the quintessential flavors of fall. Although you can buy containers of this popular spice, it only takes a couple of minutes to whip up your own using ingredients you probably already have on hand. Use what you need and store the rest in an airtight container for several weeks  – if it lasts that long!  If you can’t get enough of this classic flavor, this recipe combines it with hot coffee, Irish cream, and delicious homemade whipped cream for a cozy and satisfying adults-only treat. Pumpkin Spice Irish Coffee

Ingredients

  • Homemade Whipped Cream ingredients:
  • 1 pint heavy whipping cream

  • 2 T. real maple syrup 

  • Pumpkin Pie Spice:
  • 3 T. cinnamon

  • 1 T. ground ginger

  • 1 T. ground nutmeg

  • 2 t. ground allspice

  • 2 t. ground cloves

  • Pumpkin Pie Spice Irish Coffee:
  • 1 T. pumpkin pie spice

  • 16 oz. freshly brewed hot coffee

  • 8 oz. Irish Crème

  • additional pumpkin pie spice, for garnish

Directions

  • In a large glass bowl, blend 1 pint of heavy whipping cream with a hand mixer or immersion blender until it doubles in size and changes texture. Then, drizzle maple syrup into the bowl and continue blending until the mixture is light and fluffy. Set aside. 
  • Combine the pumpkin pie spice ingredients in a medium bowl and stir to combine. Set aside. 
  • Before brewing, sprinkle fresh coffee grounds with one tablespoon pumpkin pie spice and gently shake to evenly combine the mixture. Brew spiced coffee grounds as usual. 
  • Pour 2 oz. Irish Cream into each cup and top with 4 oz. of freshly brewed coffee. Top with whipped cream and sprinkle with additional pumpkin pie spice before serving. Enjoy!
